Iconic & stylish but particularly tricky to master. Despite this, the Chemex is still our #1 morning brew method at the workshop.

Chemex Filter Paper
Scales
32g Medium - coarse ground coffee
500g water
6-8 cup Chemex
Method
1. Place filter paper in Chemex, pour boiling water onto paper to wash filter and preheat Chemex.
2. Discard water and add coffee grounds to filter. Set Chemex on scales and tare.
3. Slowly add 70g of water to the coffee and allow to bloom but not to dry out.
4. Slowly add the rest of the water in a circular motion, occasionally giving the Chemex a swirl.
5. When the last of the water has dripped through, remove filter and serve.
